Assistant Chef Skills Programme

Suitable for beginners or experienced candidates who want to further their studies and gain a recognised qualification in the catering industry.

This Skills Programme is facilitated on Saturday mornings, 20 sessions over 6 months on campus in George. It incorporates both theory and practical work.

Fully accredited with CATHSSETA, the candidates will receive a National Qualification on successful completion of the programme.

Qualification includes:

Maintain health, hygiene and a professional appearance
Maintain a secure working environment
Maintain a safe working environment
Maintain hygiene in food preparation, cooking and storage areas
Handle and store food
Handle and maintain knives
Describe layout services and facilities of the organisation
Maintain effective working relationships with other members of staff
Prepare and cook fish dishes
Prepare and cook egg dishes
Prepare and cook pasta dishes
Prepare and cook starch dishes
Prepare and cook rice dishes
Provide a carvery / buffet service
Prepare and present food for cold food presentation
Prepare and cook meat, poultry, game and offal dishes
Prepare and cook sauces and soups
Prepare and cook fruit dishes
Prepare vegetables for hot and cold dishes
Maintain data in a computer system
Process incoming and outgoing telephone calls
Develop self within the job role

Dates:

Dates are variable according to intake demand. Usually 2 intakes per annum: February and September

Workplace practical: a minimum of 72 hours of workplace practical is required for the full qualification.

Fees:

Chef’s jacket, stock, ingredients and food supplies, training, assessment, registration fees with CATHSSETA, certification, files and workbooks.

There are no exams for this qualification

R13 000 / US$714, excluding VAT

Payment Plan – R3000 deposit and 6 monthly payments of R1992 (including VAT).
